Grindstone Bakery Coconut Cookie

This is a cookie of extraordinary softness and finesse. Two oils are used: organic extra virgin olive oil (made by our friend Pablo at award-winning Pacific Sun in Northern California) and Nutiva Unrefined Organic Coconut Oil. We blend and mix the oils with fresh stone-ground whole quinoa-millet. We use low glycemic index coconut sugar that adds its complex earthy sweetness with hints of caramel and lightly roasted nuts—a subtle natural sweetness that resolves any sensory tension. Mixed and shaped by hand.
