Bonterra Estate Cabernet Sauvignon 21

The Bonterra Estate Collection Cabernet Sauvignon is a terroir-driven expression of two singular Mendocino County estate vineyards, each contributing its own distinct character to this layered and complex wine.
Butler Ranch sits at extreme elevation on rare Red Vine soils — a mountain site that yields well-structured Cabernet Sauvignon with remarkable depth and concentration. Blue Heron Vineyard, named for the generations of great blue herons nesting in its protected oak grove, occupies a lower riverside setting whose deep, fertile soils contribute richness and texture. Together, these contrasting sites create a wine of genuine complexity and place.
Harvested entirely by hand, the grapes were destemmed and gently pressed before a warm fermentation in stainless steel tanks. Following malolactic fermentation to soften the mouthfeel, the wine aged for six months in 100 percent French oak barrels, 40 percent of which were new, at a medium toast level.
The vivid garnet-and-violet hue sets the stage for a wine of great depth. Layered aromas of black cherry, black currant, and spice give way to a decadent palate of dark fruit, leather, tobacco, and pencil shaving. Full-bodied with ripe, seamless tannins, this wine will continue to evolve and reward patience for up to five years of additional cellaring.
