Bonterra Estate Cabernet Sauvignon 21

The organically farmed grapes in this Cabernet Sauvignon were harvested entirely by hand from our Regenerative Organic Certified vineyards. The grapes were de-stemmed and gently pressed before a warm fermentation in stainless steel tanks. Following malolactic fermentation to soften the mouthfeel, the wine aged for six months in 100 percent French oak barrels, 40 percent of which were new. A medium toast level on the oak added complex barrel notes to the final blend.
